Hey All! It is that time of year again – we have so many tomatoes ripe on the vine we are running out of ideas on how to use them before the frost sets in!
I decided to make some sort of sauce and depending on how juicy the tomatoes are, I love that this base is so versatile, and healthy!!!
Here is the basic recipe – feel free to adjust, change, update!
2 TBS olive oil
1 yellow onion, chopped
5 cloves of garlic, smashed
3 – 4 pounds of fresh tomatoes, roughly chopped
1 TBS dried oregano
3 TBS chopped fresh basil
3 TBS honey
2 TBS tomato paste
1/2 tsp red pepper flakes
salt & pepper
Heat olive oil over medium heat in large saucepan. Add onions and garlic, saute until translucent, about 5 minutes. Add oregano and basil, season with salt and pepper. Add tomatoes and cook, stirring occasionally, for about 20 minutes. Add honey, tomato paste, red pepper flakes, salt and pepper and simmer for an additional 10 minutes. Carefully transfer to a blender (in batches if necessary) and blend until smooth. The sauce will thicken as it cools, but at this point, I put in freezer bags and froze until I am ready to use it!
