Greetings! So, we “kidnapped” our nieces, Mary and Sadie, from Washington this week and enlisted their help with Test Kitchen Tuesday. What to make? What kid doesn’t love corn dogs?? BUT, what we don’t love is the GMO corn and bleached all purpose flour that goes into the corn dog batter…. So, with a little research and some modifications, we came up with a tasty corn dog that is kid approved! We have linked the original recipe here, but read on for some of the small changes we made to the recipe and pictures of our lovely assistants!!!
First we mixed up the batter in our Vitamix – the original recipe calls for a combination of tapioca starch and potato starch. We used arrowroot powder instead (just because we had it on hand!):
Next, we skewered the hot dogs – don’t forget to check out the label on the hot dogs before you buy them, you would be amazed in the range of products out there!!!! Buy the best you can!
Once the hot dogs are skewered, it’s time to dip them in the batter! Through some trial and error, it’s almost best to “paint” the batter on the corn dogs – if you have too much, the batter tends to spread out when you fry them. Speaking of frying, we used coconut oil to fry them and found it added a very mild sweetness to the corn dogs!
Once the oil was hot enough we added the corn dogs and fried on each side for a couple of minutes until the batter was done, the hot dog cooked through and the corn dog was a lovely golden brown. Mary and Sadie approved!!
