Sweet potatoes are a great source of Vitamin A which supports a healthy immune system while black beans are high in fiber and protein. This recipe puts them together in a delicious salad that is easy to prepare! In our version, we made a few adjustments, like adding heart healthy avocado oil to the dressing. We didn’t serve the salad over the arugula, but are sure that would be delicious as well!
