This is one egg nog recipe that will not end up on Santa’s naughty list!!!

Coconut Milk Eggnog


3 cups coconut milk

4 organic cage free egg yolks

1 1/2 tsp vanilla

1/4 cup organic maple syrup

1 tsp ground cinnamon

1 tsp ground nutmeg

1/8 tsp ground allspice


Heat coconut milk over medium low heat.  Stir in egg yolks, continuing to stir until the mixture thickens, about 5 minutes.  Add in maple syrup and vanilla.  Remove from heat and add cinnamon, nutmeg and allspice.  Refrigerate until cool, about 2-3 hours.  Pour into individual cups (top with additional nutmeg if desired), Enjoy!!
