Hope everyone is staying cool this summer! I know that I love a cool treat on a hot day…. but of course I want to try and keep it healthy! Well, I found this recipe and had to try it! These are delicious snacks, healthy snacks and are perfect for a hot summer day!

They were incredibly easy too, so we made them the recipe of the month for our Kids Club newsletters this mont!

Microgreen salad from Lydia Shafer 3C baby salad greens 1/4 carrot shredded 1/2 cucumber 1/2 red bell pepper diced 1/4 C sprouts 1/2 med tomato 1tbsp chopped cilantro optional Combine in a large bowl and enjoy! Dress salad with dressing of choice. Makes one serving

Happy Test Kitchen Tuesday!  I am excited to start off 2016 with a submission from one of our Kif’s Cancer Fighting Kids Club members, Mary H. of Washington (10 years old).  She has embraced the idea of eating healthy and is always on the lookout for snacks she is able to make on her own at home.  She wrote the recipe down for us – but it was on green construction paper, so, I couldn’t post a legible picture here.  I have fixed a couple of spelling mistakes, but other than that, this is Mary’s Lunch Stackers recipe:

Ingredients:

*organic lettuce

*organic cheese (I used white cheddar)

*organic tomato

*organic mayo and mustard mix (this is optional)

*meat (I used salami and proscuitto)

*an organic veggie to finish it off

Step 1:  Cut up some lettuce into pieces.  If you are making 4, I would put about 3 layers of lettuce on the bottom.

Step 2: Layer the meat on top of your lettuce.

Step 3: Next, you want to layer the cheese slices on your meat and lettuce.

Step 4: Add 1 layer of sliced tomato

Step 5 (optional): Top with a dollop of your mayonnaise / mustard mixture.

Step 6: Top with a veggie bite of your choice (pickle, asparagus, green bean, or carrot)

Step 7 (optional):  Salt and pepper to taste.

Step 8:  ENJOY!!!

This is a kid-friendly recipe for those busy weekday mornings!  This is so easy to put together and not only is it super healthy, it’s really delicious too!!

We love the Purely Elizabeth brand of granola – has very little sugar and great ingredients (remember:  all granola is not equal!  Read the labels!!!!)

For those of you who don’t know what kefir is, here is a great description (I have to admit, I was a little skeptical at first, but from the first time I tried this brand of kefir, I loved it!)

GRANOLA PARFAIT 1

 

RECIPE:

1/3 cup granola (our fave brand: Purely Elizabeth)
1/3 cup pomegranate kefir (made from goats milk, similar to yogurt – our fave brand: Redwood Hill Farm)
fresh sliced strawberries (or any other fresh fruit)

Layer granola, kefir and strawberries in a bowl – grab a spoon and enjoy!!

Strawberry Rhubarb Chia Jam

Here is a kid-friendly recipe for a healthy jam using only honey to sweeten it up!  We love to use local raw honey!

 

1 1/3 cup strawberries

2/3 cup rhubarb

3 T honey

2 T chia seeds

A dash of cinnamon (optional)

Process all ingredients in a blender and refrigerate overnight, allowing the chia seed to gel and thicken the jam. Enjoy!!
