Who doesn’t love peanut butter cups?? Well, we were challenged to make a healthy version – “Challenge Accepted!” (for all of those How I Met Your Mother fans out there!!).
Starting with the chocolate, we used a wonderful product, TCHO 99% Dark Chocolate. We found this at Whole Foods…
Since the chocolate is 99% dark chocolate, it can be a little bitter…. we added stevia and honey to sweeten it up a little – a little of this stevia goes a loooonnnnngggg way, so be careful when adding!

Since this was our first “Test Kitchen Tuesday” project, we didn’t take as many pictures as we should have! But here is our finished product and I can tell you I didn’t feel guilty at all about having more than one of these!!!

Almond Butter Cups

3/4 cup TCHO 99% Dark Chocolate
2 TBS of honey, divided (raw, local honey is the best!)
1/8 tsp organic raw pure stevia
1/3 cup almond butter
1/4 tsp vanilla
1 TBS melted coconut oil

Melt chocolate in a double boiler. Stir in stevia and 1 TBSP honey.
In a small bowl, mix together almond butter, 1 TBSP of honey, vanilla and coconut oil.
Spray mold with coconut oil spray. Divide 1/2 of the chocolate mixture between each of the molds. Spoon almond butter mixture on chocolate. Top with remaining chocolate. Freeze overnight.
Remove from mold and enjoy!!
